When in the mood for something sweet, I can’t even allow myself to think about having something else than 10 g of dark chocolate or a fruit. See, I’ve become accustomed to a generally healthy lifestyle. Milk chocolate bars and potato chips have been out of my vocabulary for years now – except for my pregnancy cravings which I have, thank God, grown out of. But sometimes, a fruit or a tiny piece of dark chocolate just don’t cut it. That’s when a homemade dry cake comes to mind. Since we’ve been on a strict healthy diet lately, a banana cake made of solely healthy ingredients was the only choice.This recipe is my own – a combination of healthy banana cake recipes I’ve researched. It works and lasts for a week at room temperature, tightly covered of course.
Breadonbutter’s Healthy Banana Cake
Ingredients (for 6 persons)
- 1 cup soft brown sugar
- 1.25 cups whole wheat flour
- 1/4 cup vegetable oil
- 5 small bananas, mashed + 1 for topping
- 4 eggs
- A pinch of salt
- A pinch of vanilla
- 2 tsp baking powder
- 1 tsp rum
How to make it
- Pre-heat the oven to 200 degrees celsius
- In a bowl, whisk the eggs with a pinch of salt
- Add the sugar and mix with an electric whisk
- Add the mashed bananas and mix
- Add the flour slowly, while mixing
- Add the oil while mixing
- Add the baking powder, vanilla and rum and mix
- You can add flour if you feel the mix is too liquid (approx. 1 Tbsp)
- Pour mix in a greased small mold and cook in the oven for around 40 minutes, checking midway if a skewer comes out clean
Pair with/dip in coffee or tea!
